Strawberry Pate de Fruit (Fruit Jellies)
Looking for a perfect Valentine's Day treat that is meaningful and handmade? Try making Strawberry Pate de Fruit for your loved ones. This recipe is not that hard to make – you do need a food/candy thermometer though. The result will be ruby colored squares that taste like fresh fruit!
What You Need:
16 oz of strawberries
1 Tbs. of lemon juice
2 cups of sugar
4 Tbs. of pectin powder
Directions:
Line an 8 x 8 pan with non-stick foil or parchment paper. Spray with cooking spray.
Mix the pectin with the sugar. Set aside.
Hull the strawberries and puree. Strain into a medium saucepan – try to remove as much of the seeds as possible.
Stir in the lemon juice and sugar/pectin mixture.
Heat and stir continuously until the thermometer reaches 200 F. Lower the heat and keep the temperature around 200 for about 2 minutes.
Raise heat again and stir until the mixture reaches 230 F. Lower the heat again and cook for about another minute.
Pour immediately into the pan.
Cool at room temperature. DO NOT put in the refrigerator.
Once set, cut into small pieces and roll in sugar.
Makes about 64 pieces
