Vegan Cheesecake

Here is a perfect recipe to whip up for your loved ones (including yourself) on Valentine's Day. It is easy to make and no one will even be able to tell it is vegan! Top it with your favorite topping or leave it plain! (Credit for this recipe goes to with slight adaptations)

What You Need:

1 Keebler Graham Cracker Crust (9”)

2 8oz containers of vegan cream cheese (ex. Tofutti)

1 lemon

½ cup of sugar

½ tsp. of vanilla

A pinch of salt


Preheat oven to 350 F.

Prepare the lemon – you will need 1 tsp lemon zest and 1 ½ Tbs. juice.

Blend the cream cheese, sugar, vanilla, salt, lemon juice, and lemon zest until smooth.

Bake for 30 minutes and when cooled, place in refrigerator for at least 1 hour. 

Decorate with fresh fruit, fruit sauce, or chocolate sauce.


(Note: Do not over-bake or it will get quite stiff once chilled)
