Vegan Chocolate Chip Cookies

These chocolate chip cookies are fantastic for any time of the year, but are an especially perfect treat for Mother's Day! You cannot tell that they are vegan at all, and they have beautiful texture. Plus, they are really easy to make. Enjoy them with a glass of vegan milk, or just by themselves!

What You Need:

½ cup of refined coconut oil

1 ¼ cups of brown sugar

2 tsp. of vanilla

¼ cup of coconut milk

¼ cup of unsweetened applesauce

2 ⅓ cups of flour

1 tsp. of baking soda

½ tsp. of salt

2 cups of vegan chocolate chips 

Directions:

Preheat oven to 375 F. Line 2 large baking sheets with parchment paper or non-stick foil.

Mix together the coconut oil, brown sugar, and vanilla.

Mix in the coconut milk and applesauce.

Add in the flour, baking soda, and salt. Mix until combined. 

Mix in the chocolate chips.

Using a tablespoon size cookie scoop, place mounds of dough a few inches apart on the baking sheets. 

Bake for 9-10 minutes until golden brown.

Cool on rack for about 15 minutes and then transfer to a cooling rack.

Makes around 18-20 cookies.
