Vegan Citrus Jellies

What better way to enjoy the warm Spring weather than with fruity sweets? These jellies are easy to make and are the perfect snack to enjoy outside in the sun!

What You Need:

1 cup of sugar

1 cup of light corn syrup

¾ cup of grapefruit juice (or orange juice)

1 (1.75 oz) package of powdered pectin

½ tsp. of baking soda

2 drops of red food coloring

Decorating sugar for coating

Directions:

Line an 8 x 4 loaf pan with foil. Spray with nonstick cooking spray.

In a medium saucepan, combine the sugar and corn syrup. Stir and heat until boiling. Keep the mixture boiling until a candy thermometer registers 280 F. 

In a large saucepan (at least 2 quart), mix the grapefruit juice, pectin, and baking soda. The mixture will get foamy. Bring to a boil, stirring constantly. 

Pour the sugar syrup into the boiling pectin mixture in a thin stream, stirring constantly. 

Stir in the food coloring.

Pour into the prepared pan. Let cool/set for at least 2 hours. 

Lift the candy from the pan and cut into 1 inch pieces. 

Just before serving, toss each piece in coarse sugar to coat. Store at room temperature.
