Vegan Double Chocolate Muffins

What You Need:
1 ¼ cups of all purpose flour
¾ cup of sugar
½ cup of cocoa powder
2 tsp. of baking powder
1 tsp. of espresso/coffee powder
½ tsp. of salt
1 cup of non-dairy milk
½ cup of vegetable oil
1 Tbs. of apple cider vinegar
1 cup of vegan chocolate chips
Directions:
Preheat oven to 400 F.
Line 12 cup muffin pan with liners or grease each cup.
Mix all the dry ingredients together.
Add the milk, oil, and vinegar and mix until smooth.
Stir in the chocolate chips.
Fill muffin cups about 2/3 full.
Bake for 20-25 minutes until the muffins have cracks on the top and are firm to the touch.
Makes 12 muffins.
