Vegan Green Tea Coconut Ice Cream

As the warm weather rolls in, what is a better treat to cool off than ice cream? No need to stand in line for this dessert because you can make it right at home! This one is for the sophisticated palate – not too sweet!

What You Need:

1 can of full fat coconut milk (organic is best)

1 cup of unsweetened almond milk

2 tsp. of vanilla

2 Tbs. of matcha tea powder

¼ cup of pitted dates

¼ cup of maple syrup or agave nectar

¼ tsp. of xanthan gum


Place all ingredients except xanthan in a blender and mix until well combined. 

Add xanthan and mix again.

Taste and adjust if necessary.

Transfer to a bowl and chill for several hours. Pour into an ice cream maker and process according to the manufacturer’s instructions. 

If you eat it right away, it will be soft. You can also transfer it to a container and freeze. 

Before serving – if the ice cream was fully frozen, allow it to soften about 15-20 minutes.
