Vegan Lemon Olive Oil Cake

This Mother's Day, treat the motherly figures in your life to a yummy treat. This cake is quite easy to make and delicious!

What You Need:

¾ cup of extra virgin olive oil

½ cup of unsweetened applesauce

1 cup of non-dairy milk

2 Tbs. of lemon juice

2 Tbs. of lemon zest

1 ½ cup of sugar

2 cups of flour

1 ½ tsp. of baking powder

1 ½ tsp. of baking soda

1 tsp. of salt

Possible Toppings:

Powdered sugar and/or whipped “cream”

Berries

Mint sprigs

Directions:

Preheat oven to 350 F. 

Line the bottom of an 8” or 9” round cake pan with parchment paper or non-stick foil. Spray pan with cooking spray.

Mix all ingredients except flour, baking powder, baking soda, salt together. 

Add the dry ingredients and mix until smooth. 

Pour into the cake pan and bake for 45-60 min until a toothpick inserted into the center comes out clean.

Cool for 30 minutes and then take out of pan to cool completely on a rack.

Dust with powdered sugar and top with berries and/or whipped “cream”
