Vegan Pear Upside Down Cake
Looking for the perfect dessert as we approach springtime? Look no further! This cake is not only delicious, but a healthier option to satisfy your sweet tooth and your diet. This cake is not difficult – the most time consuming part is peeling the pears!
What You Need:
2 medium/large pears (or 3 small ones), peeled and sliced ¼ inch thick
3 Tbs. of maple syrup or brown sugar
¾ cup of non dairy milk
¼ cup of unsweetened applesauce
1 Tbs. of lemon juice
⅓ cup of sugar
¼ cup of oil
1 tsp. of vanilla extract
1 ½ tsp. of cinnamon
1 ½ cups of flour
2 tsp. of baking powder
¼ tsp. of baking soda
½ tsp. of salt
Directions:
Line an 8 or 9 inch pan with parchment paper or non-stick foil. Coat with oil spray.
Arrange the pear slices as you like. Drizzle the maple syrup or sprinkle the brown sugar over the slices.
Mix the wet ingredients together.
Add the dry ingredients and mix until smooth.
Pour the batter over the pears and gently smooth the batter.
Bake for 35 to 40 minutes until golden brown.
Cool for 15 minutes and then invert it over a plate. Peel off the parchment (or foil).
Serve with whipped coconut cream or vegan ice cream.
