Vegan Pecan Pie
Just in time for the holidays, this delicious Pecan Pie would be the perfect addition to any holiday dessert table!
What You Need:
2 Tbs. of vegan butter
1 ½ cups of chopped pecans
½ cup of brown sugar
2 tsp. of molasses
¼ cup of maple syrup
¾ cup of full fat coconut milk
2 tsp. of vanilla
3 Tbs. of corn starch
¼ tsp. of salt
1 (9 inch) pie crust/ or a graham cracker crust
Directions:
Preheat oven to 350 F. Parbake your pie crust for 7 minutes. Let cool.
Combine coconut milk with cornstarch.
Melt the butter in a saucepan.
Add the pecans and toast for about 30 seconds – stir continuously.
Pour in the maple syrup, brown sugar, molasses, coconut milk, vanilla, and salt. Stir until mixed.
Pour mixture into the pie crust. Bake for about 30 minutes.
Cool on the counter. Store in the refrigerator, serve at room temperature.
