Vegan Spice Cookies

This is a cookie that makes a person think of cooler days and warmth coming from outdoor fire pits and bonfires, or being inside someplace warm, perhaps in front of a fireplace? No matter where these cookies have plenty of flavor from the spices and molasses. The original recipe was found on ilovevegan.com and slightly adapted here. Enjoy them with a cup of coffee, tea, or hot chocolate as we enter the holiday season!

What You Need:

2 cups flour

1 tsp baking soda

½ tsp cinnamon

1 tsp ground ginger

½ tsp ground cardamom

½ cup vegan butter (8 Tbs)

2/3 cup brown sugar

½ cup molasses

½ tsp vanilla extract

Raw sugar for dipping

Directions:

Preheat oven to 350 F.

Melt the butter, then mix with the brown sugar, molasses, and vanilla.

Add in the flour, baking soda, and spices, and mix until smooth.

Chill the dough for 30 minutes.

Scoop heaping tablespoons of dough and roll into balls. 

Press the top of each ball into the raw sugar. 

Place on baking sheet at least 1 ½” apart and press gently to flatten a bit.

Bake about 8-10 minutes until tops are cracked and puffy.
